Italian Terry Lucas is Jennifer’s cooking idol & the mom of one of Jennifer’s childhood friends. This is her recipe & it is OUTRAGEOUS! We take our beautiful local eggplants and slice them really thin.. then we egg batter & lightly pan fry them. Once those babies cool we stuff them or.. roll them with a ricotta, baby spinach, parmesan and mozzarella filling and top them with tomato sauce. We serve them up over al dente garlic-buttered linguini. OH THE YUMMINESS!
